So I bought the game on Amazon yesterday, and it said I'll be getting it in a week or two. I have the demo for a few days, and I don't know if I can play it online against other members (might hold a fight against a few people I know have it).

So my question is this: can I fight against people who own the game, when playing with the Demo?

No, you can't. The versions differ. However, you CAN play with other ppl owning the MP-Demo. But when you install the game, you should remove the demo first, because they share some files, this may cause errors.
